CHEF'S TRANSITIONING FROM LAND TO SEA



Our comprehensive Chef Career Course is designed for qualified chefs looking to enter the superyacht industry. The course is accredited by IAMI and IAMI Guest. The program equips students with essential culinary skills enabling them to apply for positions on superyachts, sailing vessels or other maritime positions. The course caters to individuals exploring career opportunities in the yachting industry to secure a well-paid entry-level job in the luxury superyacht sector.

  • IAMI GUEST Introduction to Yachting for Chefs: Qualified chefs can enrol in this course for certification, focusing on the Land-to-Sea conversion, with a 1-day theory and 2-day practical including assessment.

    This program is designed for qualified chefs seeking certification in Land-to-Sea conversion and is structured as follows:

    Who is it for: Qualified chefs enrolling for certification.
    Focus: Land-to-Sea conversion.
    Duration: 3 Days 
     

    Course Details:

    Day 1: Theory (Wednesday)

    General discussion on industry theory to provide personal insights and in-depth understanding of the yacht industry. The manual will be provided to all students as an online manual for them to access once they have registered.  This is a self-learning programme (online) which they will be assessed against using theory exams and discussions.

    Students will be required to complete a theory exam covering all course material at the end of day 1.

    Day 2-3: Practical

    Practical assessments for Land-to-Sea conversion students. Separately evaluating cooking skills for qualified chefs and those without chef qualifications.

    Afternoon/Evening: Practical assessment in the form of a cook-off.

     

    Course Topics include:

    Cooking techniques, provisioning, personal hygiene, cooking hygiene, safety measures, and creating nutritional meals under professional guidance.
    Hazards, safety operations, and health regulations in the galley department.
    Importance of maintenance procedures, cleaning routines, stock control, turnover, onboard storage, and space management.
    Principles of planning and sourcing luxury produce globally.
    Catering to guest preferences, cultural, religious, and dietary requirements.
    Financial planning for guest and crew budgets, including Advance Provisioning Allowance.

    Candidates must pass all the Learning Outcomes & Assessments to qualify for the IAMI Guest Introduction to Yachting certification.

  • 10-day Chef Qualification (IAMI GUEST Superyacht Galley Chef): Ideal for individuals or qualified chefs looking to upskill for yacht culinary roles on yachts as well as those without formal qualifications who have completed the 5-day foundation course.

    Upon successfully completing the Learning Outcomes & Assessments for the full IAMI GUEST Superyacht Galley Chef course, students will receive an International IAMI GUEST Certificate.
